Boreham Wood
Sauvignon Blanc 2011
This fruit driven wine is intensely aromatic, is pale straw in colour and has a fragrant aroma of gooseberry and black currant leaf layered with red capsicum and a touch of dried thyme.

Immediately the fruitiness of this wine fills the mouth. The palate shows lime/grapefruit characters along with more tropical flavours such as melon and white peach. This wine has good mid palate concentration and is well balanced with juicy acidity and a lingering finish.

Harvest
Through intense canopy management and an in-depth knowledge of the different soils of our vineyard we were able to pick on three separate dates to maximise fruit maturity and therefore flavour. All fruit was machine harvested and processed as quickly as possible to preserve all the flavour captured throughout the season.

Winemaking
Each parcel of fruit was handled with extreme care once safely in the winery. Using various different yeasts, all ferments were taken through to dryness under cool conditions. 50% of the wine was left on yeast lees for 3 months to add complexity and texture and the other 50% had the clear wine racked off all lees. The 2 were blended together in August to create a complete and balanced wine.
